I am a mother of 2 small babes who motivate me to continue turning my passion into business. I am a lover of all things food & hospitality. I work as a private chef here in Nashville, TN & do private catering for various events from corporate gigs to studio sessions. My favorite part about cooking is the element of gathering people from all walks of life together with one thing in common. Enjoying a meal together. Quinoa Buffalo Chicken Salad

This salad is the greatest because it is best served cold, aka meal prep a huge tub of it and eat all week long! It gets better and better as it sits in the sauce too.

Quinoa Buffalo Chicken Salad

1 cups quinoa

2 cups water

2 cups shredded chicken

Buffalo sauce (I use Sweet Baby Rays Buffalo Wing Sauce or Franks Red Hot)

1 cucumber, chopped

1-2 andouille sausage (I use Trader Joe’s chicken andouille sausage)

Cook 1 cup quinoa in 2 cups liquid per package instructions. While quinoa cooks, mix shredded chicken with hot sauce and set aside. Chop cucumber and add to the chicken mixture. Slice the andouille sausage and sauté on high until browned. Add sausage and quinoa to the chicken and cucumber mixture. Stir & add more sauce to your desired liking. You could eat this now right away, but I prefer to chill the salad for a few hours and eat it while everything is super cold!
