I am a mother of 2 small babes who motivate me to continue turning my passion into business. I am a lover of all things food & hospitality. I work as a private chef here in Nashville, TN & do private catering for various events from corporate gigs to studio sessions. My favorite part about cooking is the element of gathering people from all walks of life together with one thing in common. Enjoying a meal together. Banana muffins are iconic for a reason. There is something so classic & comforting about them. I made jumbo ones because… why not… but these are definitely just as great in the standard muffin tin as well.

Perfect Banana Muffins

Makes 8 large muffins or 12 standard sized muffins

1 stick butter, melted

1 cup brown sugar

3 eggs

2 tsp vanilla extract

4 ripe bananas

2 cups flour

2 tsp baking soda

1/2 tsp salt

Topping (optional)

6 tsp brown sugar

2 tsp flour

Preheat oven to 350. In a stand mixer, beat the butter, brown sugar, eggs and vanilla together. Add in the bananas (I add them in whole) until all combined. Add in the flour, baking soda & salt until just combined. Scoop into lined muffin tins 3/4 of the way to top. If making the topping, combine sugar & flour and pour onto top of muffin batter. Bake large muffins for 25-30 mins and standard size for 20 mins.
