I am a mother of 2 small babes who motivate me to continue turning my passion into business. I am a lover of all things food & hospitality. I work as a private chef here in Nashville, TN & do private catering for various events from corporate gigs to studio sessions. Easy Shrimp Curry

Easy Shrimp Curry

I am a huge red curry fan. I love how easy one can be whipped up and has flavors like it has been stewing all day long. A way to make it even faster is by using precooked frozen shrimp. This dinner will be on the table in 20 minutes (sometimes I take that long just reading the menu when ordering curry ha)!

Easy Shrimp Curry

2 tbsp sesame oil

1/2 yellow onion, chopped

1 tbsp minced garlic

1/2 tsp ground ginger

2 tsp salt

1 cup sliced bell pepper

1 cup chopped snap peas

1 can coconut milk

1 jar red curry paste

1 tsp rice wine vinegar

1 tsp fish sauce

4 heaping tbsp brown sugar

1 lime, juiced

Frozen cooked shrimp

In a sauté pan heat the sesame oil, add the onion, garlic, salt & ginger, cook until tender. Add in the curry paste & cook until fragrant, then add in coconut milk. Simmer until sauce begins to thicken then add in veggies, vinegar, fish sauce, brown sugar & lime juice. Cook until veggie are tender & sauce has reduced slightly. Lastly, add in shrimp & cook until just warmed through. Serve with rice & extra lime!
