I am a mother of 2 small babes who motivate me to continue turning my passion into business. I am a lover of all things food & hospitality. I work as a private chef here in Nashville, TN & do private catering for various events from corporate gigs to studio sessions. My favorite part about cooking is the element of gathering people from all walks of life together with one thing in common. Enjoying a meal together. Stuffed Pepper Skillet

We LOVE stuffed peppers. They are healthy, easy & easily adaptable. I was inspired out of sheer laziness to turn stuffed peppers into this skillet casserole. I don’t think I will turn back to the regular stuffed peppers for a very long time because this is GOOD.

Not So Stuffed Pepper Skillet 

1/2 onion

4 bell peppers

1 tbsp minced garlic 

1 pack ground beef

1 jar marinara (I use Rao’s)

2 tbsp worcheshire 

1.5 cups rice 

4 cups water 

1 tsp red pepper flakes

1 tsp dried basil 

Salt & pepper

Mozzarella

Fresh basil 

In a skillet cook down your chopped onion & red peppers until tender. Add in the garlic & beef and cook through. Drain the fat then add in the marinara, worcheshire, rice, water, red pepper flakes, basil, salt & pepper. Bring to a boil then reduce heat until rice is cooked through. Stir often to make sure rice doesn’t stick to the bottom of the pan. Cover the skillet in a LOT of mozzarella and place under the broiler until browned & bubbly. Serve with fresh chopped basil.
