Sweet Potato Gnocchi W/ Brown Butter Sage Sauce

Homemade gnocchi sounds intimidating but this comes together quickly & these little pillows of joy are well worth it. This is an egg free gnocchi so very vegan friendly too! The brown butter sage sauce pairs perfectly with the sweet potato flavors.

Sweet Potato Gnocchi W/ Brown Butter Sage Sauce

Gnocchi-

2 sweet potatoes

2 cups flour

1 tbsp salt 

Sauce-

1 stick salted butter 

2-4 tbsp chopped fresh sage

1/2 cup parm

1/2 tsp garlic powder

Salt & pepper

Bring a pot of salted water to a boil. Microwave, pressure cook or boil your peeled sweet potatoes until tender then mash well. Using either your stand mixer with the dough attachment or you can mix by hand, combine the flour & salt mixture to the mashed sweet potato. You may need more flour to get the dough to come together. This will be a sticky dough so I find using a scraper makes it easier to get off the counter until there is enough flour mixed in. Roll your dough into a ball then divide into 4. Roll each portion out into a long rope & cut into even pieces. Boil in the salted water until they rise to the top. Scoop out & set aside on a sheet pan until all batches are done. When gnocchi is done cooking, add butter to a pan & cook until nutty & browning. Add in your chopped sage & cook until fragrant. Add in parmesan, garlic powder & season to taste with salt & pepper. Add in your gnocchi & cook until the gnocchi crisp up a little bit. Serve with extra parmesan.
