I am a mother of 2 small babes who motivate me to continue turning my passion into business. I am a lover of all things food & hospitality. I work as a private chef here in Nashville, TN & do private catering for various events from corporate gigs to studio sessions. My favorite part about cooking is the element of gathering people from all walks of life together with one thing in common. Enjoying a meal together. Baked Peach Oatmeal

Baked Peach Oatmeal

We are a huggeeeeee oatmeal house. It is easy, my toddler loves it & loaded with brown sugar makes it extra wonderful for me ha. I do hate cleaning up the oatmeal pot though & sometimes cooking it with a super hangry toddler can be stressful. That is where this baked oatmeal was born. Mix everything in one bowl, can bake immediately or do the night before & pop in oven when ready. What I like to do is bake it & keep in fridge. That way in the am I can scoop some out, pop it in the microwave & boom, breakfast is served.

Baked Peach Oatmeal

2 cups oatmeal (I use quick oats)

1 tsp baking powder

1/2 tsp salt

2 cups milk (milk of choice, any work!)

2 eggs

1/2 cup maple syrup

1 tbsp vanilla

1 tbsp cinnamon

1 jar peaches (I like the ones from Trader Joe’s)

Sprinkle of brown sugar (optional)

Preheat oven to 375. Mix all ingredients in a bowl except the peaches. Pour into a greased baking dish & then top with the peaches. Sprinkle with brown sugar if you desire & bake for 45 minutes. Serve immediately or store in your fridge for up to a week.
